The hook

A kitchen designed for a standing adult of average height quietly fires everyone else from their own cooking.

Cooking is one of the most fundamental acts of independence and one of the greatest pleasures of a home. Yet the standard kitchen is built around a single, narrow assumption: a standing adult of roughly average height, with two strong arms and a full reach, who can carry a hot pan across the room and bend into a base cupboard. Change any one of those - use a wheelchair, be much shorter or taller, lose strength or reach in one arm, tire easily, or simply grow older - and the kitchen begins to fight you. The worktop is at the wrong height, there is nowhere to put your knees under the sink, the hob controls are at the back behind the pans, and the things you use every day are on a shelf you cannot reach.

None of this is inevitable. An accessible kitchen is not a clinical kitchen; it is a kitchen thought through for the actual range of people who will cook in it. Get the worktop heights, the knee space, the reach and the controls right, add a few safety moves, and you get a kitchen a seated cook and a standing cook can share, that a family can grow older in, and that simply works better for everyone. This lesson shows how.

One worktop height fits no one. Vary it, open the knees, bring storage to the cook.

The myth of one worktop height

The first thing to unlearn is that a kitchen has a single correct worktop height. The familiar figure - a run of worktop at a fixed height around 900 mm - is a compromise tuned for a standing adult of average height, and it is wrong for a great many people. A seated cook working from a wheelchair needs a lower surface they can get their knees under and work at without lifting their shoulders. A very tall person bends and aches at a low counter; a very short person or a child cannot use a high one safely. Reduced strength changes things again: lifting a full pot onto a high hob is a different task from sliding it along a continuous surface.

The design response is variety and, where possible, adjustability. In a generous kitchen, provide worktops at more than one height, so tasks can happen at the surface that suits them - a lower zone for seated work and food preparation, a standard-height zone for standing tasks. The most inclusive kitchens use height-adjustable sections - a run of worktop, or the sink and a prep area, that rises and falls on a mechanism so the same kitchen serves a seated and a standing cook, or adapts as a resident's needs change. Where adjustability is not affordable, at least provide a usable seated work zone with the surface at a height a wheelchair user can work at, and design so heights can be altered later without ripping out the whole run.

Think of worktop height the way you now think of a ramp gradient: there is a typical figure, but the real design question is who is using it and for what. A common guidance band puts a seated worktop lower than the standing default, with clear knee space beneath - but confirm the specific heights against your local standard and, better still, against the actual users where they are known. The point is not to memorise a number; it is to stop assuming one height fits everyone, because it never has.

Knee space, toe clearance and working seated

A worktop at the right height is useless if a seated cook cannot get close to it. This is where knee and toe clearance becomes the make-or-break detail. To work at a sink or a hob while seated, a person needs the space beneath the surface to be open - clear of cupboard carcass, pipes and panels - so their knees and the front of the wheelchair can slide underneath and bring them within reach of the tap, the basin and the pan. A sink boxed in with a base unit below forces a wheelchair user to work sideways-on at arm's length, which is awkward, tiring and unsafe with hot water and sharp knives.

So design knee spaces deliberately at the key wet and hot work points: under the sink and under at least one section of hob or prep worktop. Provide clear width and depth for knees, and a shallower toe recess at the very bottom so the footplate can tuck in - the same principle as the toe kick you already draw under base units, but sized and kept genuinely clear. Under a sink, insulate or box the hot pipes and the underside of the bowl so a seated cook does not burn their knees on them - a real hazard for people with reduced sensation. There is a trade-off to be honest about: open knee spaces reduce base storage, because you cannot have a cupboard where the knees go. The answer is to move storage elsewhere - tall pull-out larders, drawers rather than deep low cupboards, and wall storage brought down within reach - rather than to fill the knee space back in. A kitchen with a bit less base storage that a person can actually work in beats a fully fitted kitchen they can only watch from the doorway. And knee spaces help more people than wheelchair users: anyone who wants to sit to prepare a long meal, an older cook who tires standing, or someone recovering from an operation. Confirm the specific clearance dimensions against your local guidance as you detail.

Reach, storage, layout and front-mounted controls

Beyond height and knee space, an accessible kitchen is governed by reach. A seated person, a short person, or anyone with limited shoulder movement has a far smaller comfortable reach range than the standing adult the standard kitchen assumes - they cannot reach the back of a deep worktop, the high wall cupboard, or the bottom of a deep low cupboard without strain or risk. Design so the things used most often live in the easy-reach band - roughly between knee and shoulder height for a seated user - and bring the rest to them. Pull-out and pull-down mechanisms do exactly this: pull-out larder units, drawers instead of low cupboards (so the contents come to you rather than you diving in), pull-down shelves that bring a wall cupboard's contents down to the worktop, and carousels in corners. Deep drawers with full extension are one of the single most useful moves in any kitchen, accessible or not.

Layout matters as much as fittings. The old work triangle - the path between sink, hob and fridge - still applies, but for a seated or less mobile cook you want it compact and continuous, so a hot or heavy pan can be slid along a worktop from hob to sink rather than carried across a gap. Keeping the main appliances in one connected run, with continuous worktop between them, turns dangerous carrying into safe sliding. Allow a clear turning space - the familiar 1500 mm circle - so a wheelchair can pivot between the runs, and keep the floor uncluttered.

Controls decide the rest. Put hob and appliance controls at the front, not at the back where a seated cook must reach across hot pans and burners to turn them off - a genuinely dangerous arrangement that standard kitchens impose without thinking. Choose lever taps or a pull-out spray, clear tactile and visual markings on dials, and a wall oven at a height that opens beside a pull-out shelf so a hot dish can be transferred sideways rather than lifted down from an overhead grill. Ovens with side-hung doors are far safer for a seated cook than a drop-down door they must reach over. Every one of these is a specification choice, framed here as typical good practice - confirm the binding requirements against your local standard.

Safety, finishes and the utility room

The accessible kitchen is also the safe kitchen, and several of its safest moves happen to help everyone. Induction hobs are a strong choice: the surface stays relatively cool, there is no open flame, and many switch off when the pan is removed - a real benefit for anyone who may forget, misjudge or lose sensation, and for homes with children. Where gas remains, flame-failure devices and front controls become even more important. Contrast the edge of the worktop and the hob against their surroundings so a person with low vision can judge where surfaces end, and mark controls clearly.

Lighting and finishes carry a lot of the safety load, and they belong to the interiors scope. Provide bright, even task lighting directly over the worktop, hob and sink, not just a single ceiling fitting that puts the cook's own shadow onto the chopping board - poor kitchen lighting is a leading cause of cuts and burns for people with low vision. Choose slip-resistant flooring suitable for a room where water and oil are spilled, avoid high-gloss surfaces that throw blinding glare under task lights, and use tonal contrast to distinguish worktop from cupboard from floor so edges and openings read clearly. Rounded worktop corners reduce injury in a room people move through quickly, sometimes carrying hot things.

Don't forget the utility and laundry space, which is subject to all the same logic and is often ignored entirely. Front-loading washing machines are usable by a seated person where top-loaders are not; raising a machine slightly, or setting it under a worktop with knee space beside it, saves painful bending. Provide reachable controls, a pull-out or pull-down drying arrangement rather than a high line, and clear floor space to work from a seated position. As throughout this course, treat the dimensions here as typical guidance and confirm the binding figures - worktop and knee-space sizes, clearances, electrical and gas safety requirements - against your current local code, and where the users are known, design to them directly rather than to an average that fits no one.

Take a real kitchen and rework it so a seated cook and a standing cook could share it safely. Work in section as well as plan - this room is decided as much by height as by layout.

Give the kitchen the floor area and servicing to be inclusive before the layout is fixed. A kitchen that must offer varied worktop heights, knee spaces, a compact continuous work run and a 1500 mm turning space needs a plan generous enough to hold them - squeezed galley kitchens rarely can. Position the kitchen on the accessible route, coordinate power and plumbing so height-adjustable units and front-controlled appliances are possible, and locate it so a seated cook is not isolated from the living and dining space. Reserve the option to adapt later.

For the interior designerAccess in rooms, fittings & finishes

This room is almost entirely yours - heights, knee space, reach, controls, contrast, lighting and appliance choice all live in your scope. Specify a seated work zone with open, insulated knee space; drawers and pull-out larders instead of deep low cupboards; front-mounted hob controls; an induction hob; lever taps; a side-opening wall oven beside a pull-out shelf; and bright task lighting over every work point. Contrast worktop edges, hob and controls against their backgrounds, choose slip-resistant matte finishes, and remember the utility room needs the same care.

Stop drawing one worktop height and one run of identical base units - start asking who cooks and how they reach. Sketch a section through the sink: is there open knee space, or a cupboard blocking a seated cook? Sketch the hob: are the controls at the front or behind the flames? Trace the path from hob to sink: can a hot pan slide, or must it be carried? Build the instinct now that a kitchen is a set of reach ranges and work heights, not a catalogue of matching cabinets.

Misconception check

An accessible kitchen just means lowering everything and it will look institutional and cramped.

Lowering everything to one height simply swaps one wrong height for another - it fails standing cooks the way the standard kitchen fails seated ones. An accessible kitchen offers variety and, where possible, adjustability: more than one worktop height, open insulated knee space at the sink and a hob, storage brought into the easy-reach band with drawers and pull-outs, front-mounted controls and a compact continuous work run. None of this is inherently institutional - many of these moves, deep drawers, induction hobs, good task lighting, lever taps, are exactly what high-end kitchens already use because they work better for everyone. Nor is it cramped if the plan is generous enough. It reads as a well-thought-out kitchen, because that is what it is. Confirm the specific heights and clearances against your local code.
